Beef tripe stew

For 4-6 persons:
Clean 1.5 pounds of beef tripe, cut it in small slices and cook it for at least two hours… better three or four. Add salt, pepper, some chili peppers and one pound of yogurt. Wait for half an hour. Add half a clove of garlic, one pound of white beans and let it sit for half an hour. Warm it up and ENJOY! Add some red wine vinegar or lime juice if you like. Garnish with fresh celery and parsley. Wow, this is so gooooooooood.
